WinIPAC2 best practice

Hey guys! 

2 questions!

1) I had to update my IPAC and my question is what is the best way to setup the keys? Should I change each emulator to suit the current setup of the keys?

or

Can rocketlauncher switch WinIPAC profiles for each game? I've tried doing that but I cant get it to work.

or

Do I use AHK to change the current inputs from WinIPAC to something else?

Whats the best way to do this? Can you please point me in the right direction. I've read and watched a lot of content but can't get a straight answer.

2) I've recently purchased a KinHank hard drive with 80,000 games and surprisingly it all works. My question is how safe are these to use? I've installed it on a fresh windows 10 with nothing on there. I'm just worried that there might be some sort of sinister software tracking or recording keystrokes and sending it off into the ether. I have turned off wifi. Anyone have any insight to this?
