Emulation PC?

So I've been working on my 1st HyperSpin cabinet for a while, and the whole time I was planning on using an old Dell Optiplex 755, but I would really rather just piece together a different PC specifically for the cabinet. I 100% understand that the Optiplex will run basically any game I put on it up to the PS1, maybe it would even run some PS2 games. Anyways, I was planning using a GeForce 210, 4gb memory, 120gb SSD (would be nice to have speedy boot time :)), and a 350w psu. The problem is that I would have no idea where to even start looking for a CPU. I have built multiple PCs before, so it's nothing new, however, I just never really understood CPUs, the types, the processing capabilities, etc. So would any of you be able to give me some recommendations for a good cpu that would emulate games up to about the PS2, and that would go good with the 210. I can buy any mobo based on the socket of the cpu. Sorry for long explanation, any help is appreciated :)

I'm running an AMD A8 6600k 3.9GHz which is not overclocked... Got 8Gb DDR3 1600 and its installed on an Asus F2A85 Vpro Mobo with HD7770 GPU. Windows could boot up faster, but from pressing the power button to having windows on is around 20-30 seconds.my C drive has quite a bit of stuff on it and my steam/origin software seems to want to update quite frequently. I've run PS1 games with no problem. I occasionally play train sim and it runs that pretty well to, so i cant see it having any issues with PS2 when i get round to installing it!
