Separating ROM's

So its been a while since I been on here and messed with anything but I recently built my son an Arcade and I am trying to figure out how do I upgrade my ROMS from MAME 138 to whatever version it is now. As well as wondering is there a program that helps you separate US & JAPAN ROMS because I only want the US Roms in my folders ?
